I was at a get together when a pizza was ordered from a local pizzeria. Naturally, keto was not going to be on the menu so I wasn’t picky on what was ordered and one of the choices was a Chicken Donair Pizza as it was our hosts favourite pizza as she only ate chicken and fish. Myself, if I was to order a pizza it would have been one of the reliable choices like ham and pineapple or pepperoni. Either with regular (not tangy) sauce on a gluten loaded thick pie crust with mozzarella cheese. No dips, no extra famcy stuff like stuffed crust or weird layers, just a regular reliable pizza pie. And then the pizza arrived and oh the smell! It was fantastic and I caved. One of the pizzas was an all dressed sorta thing which was way too risky for me so I opted for the Chicken Donair pizza that didn’t appear to have any tomato sauce on it. This was intriguing to me, because I am pretty picky over pizza sauce and I find so many places have a sauce that is too tangy. First bite into the Chicken Donair Pizza and I was hooked, the flavour was amazing and it was a taste I had never had before.It was garlicky, creamy and cheese, cheese cheese! Simply magnificant, and when I got home I googled the pizzeria, whose menu, listed the Chicken Donair Pizza’s toppings as sweet sauce. A few clicks later I found a recipe for Donair Sweet Sauce and began to modify it keto style! In determining the expiry date of the sauce, go with the expiry date of the cream you use.
- 2/3 cup cream I used 18% coffee cream
- 1/4 cup white vinegar
- 1/2 tsp garlic powder
- 1 eyedropper stevia drops for sweetleaf, other may be weaker or stronger.
- 2 tsp guar gum Gaur gum added to 18% cream, heavy cream will require only 1 tsp

Turn off the stop (but leave saucepan on element and using a teaspoon, skim off a tiny bit to taste it. This is where you can add more stevia drops for your liking. If you feel you need more, then add a few drops more and continue stirring for another minute.

When you are happy with the sweetness, pour the sauce into a storage container and allow it to cool.
