If you are not new to the Keto diet lifestyle then you know that there are endless combinations to satisfy your taste buds. From sweet to savory there really is something for everyone and I love trying different combinations that help me stick to the high fa, low carb keto lifestyle.

This recipe that I share today is actually a botched fat bomb bar receipt that turned into a pretty awesome tasting breakfast, (or anytime cereal).

This botched fat bomb recipe makes a delightful roasted pecan, maple flavour cereal for the morning that is a great substitute for those who like granola.

Ingredients
  • 2 cups Pecans halfs or pieces
  • 1 cup Hemp Hearts
  • 1/2 cup Unsweetened Shredded Coconut
  • 1/2 cup MTC Oil Must be liquid MTC oil, do not substitute with coconut oil or it will be a bar isntead.
  • 1/2 cup salted butter melted
  • 1/4 cup Mock Maple Syrup or Josephs Pancake Syrup I use Josephs for simplicity
  • 5 drops stevia This is optional really, I found this cereal adequate with just the Josephs syrup
  • 1 tbs cinnamon Optional but tasty
Instructions
  1. Pre-heat your oven to 350 degrees.

  2. Chop pecans into smaller sizes if they are whole or halfs with a sharp kitchen knife. I would not recommend going any smaller that the photo.

  3. In a bowl, mix together all the ingredients with a spatula of hands if you prefer and mix well. Stevia is optional based on your level of sweetness you prefer.

  4. In a casserole or baking dish, add the mixture and press down to make it level. Cooking spray may be needed depending on your cookware, however, the oil and butter should prevent anything from sticking.

  5. Bake for 30 minutes.

  6. Once you see the butter and oil bubbling a bit and the top is just starting to brown you can take the pan out an let it cool.

  7. Once cooled, break up cooked mixture and place in a storage container and place in the fridge.

  8. Serve in a bowl as you would any other cereal and add your liquid. I used 18% coffee creamer as its low carb but not as thick as heavy or whipping cream, plus the whipping cream around where I live, contains  carrageenan which I tend to avoid as it is a thickener additive that has been controversial with health gurus.  Awesome alternatives to cream are unsweetened almond milk.
